Ingredients

  • 300 ml full-fat canned coconut milk, well shaken
  • 50 ml cold water
  • 20 g caster sugar or sweetener, to taste
  • 1 tbsp fresh lime juice
  • 1 pinch of salt

Instructions

  1. 1

    Base

Whisk together coconut milk, water, sugar, lime juice and salt until the sugar dissolves completely.
  2. 2

    Pint

Pour into the Ninja CREAMi pint without going past the MAX FILL line.
  3. 3

    Freeze

Seal and freeze flat for at least 24 hours.
  4. 4

    Spin

Place the pint in the machine and run the Sorbet program.
  5. 5

    Re-spin

If the texture is crumbly, add 1 tbsp coconut milk and use Re-spin.
  6. 6

    Serve

Serve straight away topped with toasted coconut flakes or fresh pineapple slices.

Tips

  • Use full-fat canned coconut milk, not the lite version — the natural fats are what give this sorbet its creamy texture.
  • Shake the can well before opening because the fat separates when cold.
  • Let the pint sit 5 minutes at room temperature if it feels very hard.

Variations

  • Add 50 g mango pulp for a coconut-mango sorbet.
  • Stir in toasted coconut flakes as a mix-in after the first spin.
  • Add 1 tsp vanilla extract for a sweeter, more rounded flavour.

FAQ

Can I use lite coconut milk?

Yes, but the texture will be less creamy and the coconut flavour more subtle.

Does coconut freeze well?

Yes — the natural fats in coconut milk keep the sorbet soft even when frozen.

How long does it keep?

Best within the first 7 days, stored in a sealed pint.
